Unlike black tea, green tea is not fermented during production. The green tea leaves are not oxidised in order to preserve the plant substances inside the leaf. Instead, the leaves are heated, steamed or even roasted. This closes the cell pores and literally locks the desired plant substances inside the tea leaf. Incidentally, this process also locks the green colour of the tea leaf, which ultimately gives green tea its distinctive name, inside the leaf.
