Annatto, also known as achiote, has a long and fascinating history deeply rooted in the culinary traditions of the indigenous peoples of Central and South America. The annatto shrub (Bixa orellana) originates from the tropical regions of the Amazon basin and was used by the indigenous peoples as a coloring agent and medicinal plant. More than 2,000 years ago, the Maya and Aztec peoples discovered the versatile uses of annatto seeds, both as a spice and for body painting and ritual purposes.

These small, red seeds contain the carotenoid pigment bixin, which is often used as a natural colorant in the food industry.
