Watercress is a perennial aquatic plant in the mustard or oilseed rape family (Brassicaceae) that thrives in clear, flowing water. Its hollow, creeping stems form roots at the nodes and form dense stands. The dark green, pinnate leaves are roundish to oval and have a sharp, spicy taste. From May to September, the plant bears small, white flowers in dense racemes, from which narrow pods with fine seeds develop.
Indications
Respiratory diseases – cough or bronchitis, to increase appetite and for digestive complaints, suitable as a spring detox, has an antibacterial, blood-purifying, expectorant effect, for rheumatic complaints and gout
Use
Watercress is used as a pressed juice, in salads with dandelion leaves, fresh nettle leaves, and possibly with the addition of young birch leaves, for insufficient kidney function, as a stomachic, for liver and gallbladder disorders and for metabolic disorders, in smoothies, soups & sauces, butter & spreads, and as a side dish for fish and meat.
