Ananas comosus, commonly known as pineapple, is converted into a fine powder by spray drying. Fresh pineapple juice is sprayed into a stream of hot air so that the water evaporates and a concentrated fruit powder is produced. This spray-dried pineapple powder retains most of the original nutrients and the intense flavour of the fruit.
