For this flavoured oil, garlic and olive oil are blended together to create a savoury, fresh blend. No additional essential oils are used whatsoever. The partner mill uses the Cobrancosa, Cordovil de Serpa and Arbequina olive varieties for this oil.
The ripe olives and fresh garlic are cold-pressed together. During this process, the essential oils naturally present in the garlic are infused into the olive oil, giving it its savoury flavour.
Garlic is traditionally regarded as a well-known spice and medicinal plant.
