Freeze-dried fruits are more expensive because the process is complex, energy-intensive, and time-consuming, and only a small amount of end product is obtained from a large quantity of fresh fruit. At the same time, they are of particularly high quality: aroma, color, vitamins, and nutrients are almost completely preserved, they have a long shelf life, and do not require any additives.
Botanically, strawberries belong to the rose family (Rosaceae). The plants form low-lying or slightly upright rosettes with serrated leaves and white flowers, from which the characteristic aggregate fruits develop. Each fruit consists of many small nuts (achenes) on the red false fruit, which has a sweet and sour taste. When freeze-dried and cut, the color, aroma, and nutrients are largely preserved.
Historically, strawberries have been known in Europe since the Middle Ages. Wild forest strawberries (Fragaria vesca) were already mentioned in early medieval herbals and cultivated in monastery gardens. The larger garden strawberry (Fragaria × ananassa) originated in the 18th century from crosses between different species and quickly spread throughout European gardens. Then as now, strawberries were valued both as food and for their mild healing properties.
