Lavender is one of the best-known and most versatile medicinal plants of the Mediterranean region. The grey-blue lavender flowers impress with their intense, floral-spicy aroma and can be used in a wide variety of ways. Whether as lavender tea, in the kitchen, as a fragrance ingredient or for external application: dried lavender flowers are a true classic among natural medicinal herbs.

Uses and Effects

As lavender tea: The dried lavender flowers in organic quality are ideal for preparing aromatic lavender tea. Its floral-spicy taste makes it a distinctive herbal tea. Organic lavender tea is particularly popular in the evening, traditionally used to support inner calm and relaxation before sleep. As a culinary and spice herb: Dried lavender flowers lend dishes an unmistakable, Mediterranean-spiced aroma. They pair well with meat dishes, grill marinades, herb blends such as Herbes de Provence, as well as desserts, syrups and baked goods. Edible lavender flowers are a valued spice in modern natural cooking. 

As a fragrance and room ingredient: Dried lavender is also an excellent natural fragrance element. In scented sachets, potpourris or as an ingredient in incense blends, it releases its characteristic, calming scent.

About the Plant

Lavandula angustifolia is a perennial, woody subshrub from the mint family (Lamiaceae) and reaches a height of approximately 40 to 60 cm with a compact, bushy habit. The narrow, grey-green leaves are densely hairy on both sides and give the plant its characteristic silvery appearance. The upright, spike-like inflorescences bear grey-blue, zygomorphic individual flowers that emit an intense fragrance. The flowers are rich in essential oils and are visited by numerous insects, particularly bees, during the harvest season. The plant prefers well-drained, calcareous soils in fully sunny locations. True lavender can be distinguished from other lavender species by its narrower leaves and purer, less camphor-like scent. 

Other names: Lavender is also known as true lavender, garden lavender, narrow-leaved lavender, English lavender or common lavender.

Habitat and harvest time: True lavender originates from the western Mediterranean region, in particular from the mountain areas of Provence, Spain and Italy. Today it is cultivated in many parts of Europe, including Bulgaria, France and the United Kingdom. The flowers are harvested during the main flowering period between June and August, when the essential oil content is at its highest.

Historical roots: Lavender is one of the oldest cultivated medicinal plants in the western world. The Romans already used it to scent their baths and laundry, as the name derived from the Latin "lavare" (to wash) suggests. In the Middle Ages, lavender was indispensable in monastery gardens throughout Europe and was systematically cultivated by Benedictine monks. Hildegard von Bingen described its use in detail in her writings. In European folk medicine, lavender has a centuries-long tradition as a calming remedy and for headaches.

Key active constituents:

  • Essential oil (linalool, linalyl acetate): The main active constituents of lavender flowers, responsible for the characteristic scent and calming properties of the plant.
  • Flavonoids (incl. luteolin, apigenin): Secondary plant compounds with antioxidant activity that work in combination with the essential oils.
  • Rosmarinic acid: A polyphenol with antioxidant properties, also found in other members of the mint family.
  • Coumarins: Secondary plant compounds that have attracted attention in traditional natural medicine.
  • Tannins: Present in the flowers and contributing to the astringent properties of the plant.
  • Triterpenes (incl. ursolic acid): Further secondary plant compounds identified in the lavender plant.
