Curcuma zedoaria, syn. white turmeric, root cut, from conventional cultivation
Hildegard von Bingen described zedoary as the European ginger.
Zedoary root, closely related to ginger and turmeric, was already valued in ancient Indian and Chinese medicine. In Hildegard von Bingen's herbal works, zedoary was mentioned as an aromatic and warming spice that was used in food and remedies.
Trade routes brought the root to Europe in the Middle Ages, where it was cultivated in monastery gardens and documented in pharmacopoeias.
Due to its intense, slightly bitter aroma, zedoary was highly valued both in cooking and in traditional herbal medicine.
To this day, it remains a prized spice and ingredient in classic herbal remedies.
