Carrageen moss is a multicellular red algae from the Gigartinaceae family. It grows mainly on the rocky coasts of the North Atlantic and forms dense colonies in the intertidal zone. The algae has flat-lobed, forked thalli, which appear reddish to purple when fresh and take on a yellowish translucent color when dried.
It is characterized by its high content of polysaccharides (carrageenan), which gives it a cartilaginous, elastic structure.
Botanically, Chondrus crispus is considered a typical representative of Atlantic red algae flora.
During the Great Famine in Ireland (1845–1852), this red algae was collected on the coasts and used as an important source of food, as it is rich in nutrients, especially iodine, sulfur, calcium, and vitamins.
Früher wurde die Alge meist zu Gelee oder Pudding verarbeitet, indem man die getrocknete Alge in Milch oder Wasser kocht.
Heute wird Carrageen vor allem als natürliches Verdickungs- und Geliermittel in Lebensmitteln und Kosmetik verwendet.
