Vanilla is one of the oldest and most valuable spices in the world. It originates from Central America, where the Totonacs revered it many centuries ago and used it as a precious ingredient in special drinks. It was the Aztecs who first brought vanilla to their court, and later it was taken overseas by European explorers.
For a long time, vanilla remained a rare treasure, as the delicate orchid was difficult to cultivate outside its native habitat. It was not until the 19th century that a method of pollinating the flowers by hand was discovered on the island of Réunion, then known as “Île Bourbon.” This process revolutionized vanilla cultivation and made the famous Bourbon vanilla possible.
Madagascar soon became one of the most important places for vanilla cultivation. To this day, the old tradition is still practiced there: farmers pollinate each individual flower by hand, harvest the pods in painstaking work, and then allow them to ferment and dry slowly.
