Name: Lime / Lime Peel
Botanical name: Citrus aurantifolia Cortex
Product form: Peel, dried, cut
Ingredients: 100% dried lime peel from certified organic farming
Lime peel adds a distinctive touch to both kitchen and cup with its intensely fresh citrus aroma. Compared to the slightly sweeter lemon peel, it has a sharper, subtly bitter finish. Dried and cut, it releases its aroma equally well in tea, cooking, and baking.
Uses
As a tea: Our dried, cut organic lime peel works well as an aromatic tea, either on its own or as a lively addition to herbal and fruit tea blends. Its fresh, citrusy note also makes it a great base for iced tea.
As a culinary spice: In the kitchen, lime peel adds an intense citrus note to marinades, dressings, baked goods, and desserts. It's equally suited to flavoring cocktails, syrups, or homemade spice blends.
About the Plant
The lime (Citrus aurantifolia Cortex) is an evergreen, thorny shrub or small tree from the rue family (Rutaceae). It grows to a height of 3 to 6 meters and has glossy, dark green, oval leaves. The small white flowers have an intense fragrance and appear several times a year, allowing the plant to bear fruit almost year-round. The round to oval fruits are smaller than lemons, thin-skinned, and green to yellow-green in color, with a very tart, aromatic pulp.
Other names: Persian lime, Tahiti lime, seedless lime; known in English as Persian Lime or Tahiti Lime.
Origin and harvest: The lime most likely originated in Southeast Asia and is now cultivated worldwide across subtropical and tropical regions, including Mexico, Brazil, and the Mediterranean. The peel is obtained after the fruit harvest, once the fruit has reached full ripeness.
Historical roots: Citrus fruits reached the Arab world via trade routes from Asia and from there spread into the Mediterranean region, where cultivation began in the Middle Ages. The lime itself played an important role in seafaring, British sailors carried citrus fruit aboard ship, which later earned them the nickname "Limeys."
Key compounds:
- Essential oils (including limonene, citral): responsible for the characteristic, fresh citrus aroma
- Vitamin C: naturally present in the fruit peel
- Flavonoids: secondary plant compounds typical of citrus peels
- Bitter compounds: contribute to the sharp, fresh flavor profile
