The delicate leaves and stems of woodruff, which belongs to the Rubiaceae family, thrive in the shady deciduous forests of Europe. The herb is characterized by its natural fragrance, which only fully develops through gentle drying. This produces coumarin, the aromatic substance that gives woodruff its unmistakable sweet, woodsy note.
Woodruff was already widely used as an aromatic herb in the Middle Ages and was used in kitchens and monastery gardens. Historical records show that the herb was used to scent living spaces, clothing, and festive drinks. It became particularly well known in German-speaking countries for its role in traditional May punch and spring rituals, in which the fresh green symbolically heralded the beginning of the warm season.
