Cinnamomum verum comes from the tropical cinnamon tree of the laurel family (Lauraceae). The evergreen tree reaches a height of up to 10 meters and bears shiny, leathery leaves and small, yellowish-white flowers. The cinnamon bark used is obtained from the inner bark layer of young shoots and rolled several times, resulting in the characteristic, fine cinnamon sticks.
Botanically, Ceylon cinnamon differs significantly from cassia cinnamon in its finer texture, lighter color, and lower coumarin content.
