Cassia comes from the laurel family (Lauraceae) and is closely related to true cinnamon (Cinnamomum verum). Its bark grows in thick, woody sticks that are rolled into a delicate, spiral structure.
Compared to Cinnamomum verum, Cinnamomum cassia has a more intense, sharper flavor and thicker bark. The scent is particularly aromatic, with a sweet and slightly spicy note that is ideal for a variety of uses in the kitchen.
Cinnamomum cassia has a long history and was already a valuable commodity in ancient times. Cassia bark was used in ancient China, not only as a spice but also in traditional medicine. Soooo würzig!
