Shiitake mushrooms (Lentinula edodes) have been used in Asia for around 3,000 years! The mushroom contains an extraordinarily complex variety of bioactive substances! In addition to B vitamins—which are vital for life but virtually absent in plants—shiitake mushrooms contain ergosterol (provitamin D)! They also contain minerals such as potassium, calcium, phosphorus, iron, and zinc! Seven of the eight amino acids essential for humans are also present. In addition to vitamins and minerals, shiitake mushrooms contain a variety of organic substances such as nucleotides, amino acids, peptides, organic acids, and sugar compounds.
