Bedstraw belongs to the Rubiaceae family and is rather delicate and inconspicuous, making it one of the more unassuming herbs. True bedstraw (Galium verum) has yellow flowers and is not quite as common as white bedstraw, which has white flowers. True bedstraw is mainly found in meadows and moorland meadows, as well as at the edges of bushes and paths. True bedstraw is very easy to recognize by its golden yellow petals, which are arranged in panicles and smell slightly of honey.
The edible parts of the plant include the flowers, the needle-shaped leaves, the stems, and the seeds. Its mild flavor makes it particularly suitable as a salad base. It can also be added to soups and vegetable dishes and cooked like spinach.
But true bedstraw is not only used in the kitchen. In folk medicine, too, true bedstraw is said to have positive properties.
